The estate has two wide cellars, particulary suitable for the preservation of fine wine. At the basement of the hotel you can find the original cellar that Tota Virginia used to produce and aged the wines of the estate. The temperature is warm during the winter and cool in the summer, with the right level of humidity. Below the ground level of the restaurant there is the cellar where you can find a large selection of our wines.
The bottles are stocked in a horizontal position, like the tradition. We decide to keep al the bottles into the cellar, renouncing to show them in the restaurant, because the light is too bright and the sudden changes of temperature.
The king of the cellar is the Barolo! Serralunga d'Alba is one of the fourteen towns where Barolo is produced and, of course, we couln't renounce to have a large selection of different producers and vintages. Every single bottle of Barolo is the rappresentation of tradition, personality, care and craft of the producers. We also choose a large selection of Barbaresco, espression of a terroir few hills far from Serralunga.
The cellar keeps more than 1000 labels
, with a large selection of the best Champagne and sparkling wines from Langa, Roero and Franciacorta
; other important red wines, Barbera and Nebbiolo, are on the winelist which is completed with the most important Italian white and red wines, some bottle from abroad and enviable list of the best Passito, the famous sweet wine made from raising.
